Valentine’s Day Scallops w/ Spinach, Risotto
Kudos to Skinny Taste for the awesome recipe. We followed their instructions exactly, with the exception of adding a sprinkling of brown sugar to the scallops along with salt/pepper in the seasoning process.

They were absolutely perfect.
Beautiful, romantic, fairly quick – 40 minutes total, most of which was the risotto – and absolutely delicious.
