Seven Minute Breakfast Taco

This recipe works with any leftover meat. Best part? Easy enough to do with a hangover. So easy, serious yum, and perfect road food.

Ingredients

  • leftover meat
  • handful of cilantro, chopped
  • 1/2 habanero, diced (or any chile pepper of your choice)
  • shredded cheese, to taste
  • 1 tbps. EVOO
  • one tortilla
  • one egg
  • 1 tsp. cacique crema

Directions

  • chop leftover meat into cubes
  • sautée meat and chiles on medium high, oiled pan until browned and slightly crisp, set aside (approx. 3 minutes)
  • scramble egg in same pan
  • heat tortilla on stove until crisp (I like it a bit blackened), remove and immediately add cheese
  • add egg, meat, cilantro
  • serve and enjoy
